Tacos and hot sauce

The venerable, elder statesman of journalistic entertainment, Texas Monthly, ran an article about “100 tacos you have to eat before you die.” Or something like that. I used to admire the magazine, but they’re consistently getting it wrong. Or mostly wrong. They were right about Chico’s Taco in El Paso. But Rosario’s in San Antonio? I’ve been forced to make several trips there. The fish tacos, don’t get me wrong they are exceptional tacos, but what’s really good at Rosario’s? The hot sauce.

It’s a smoked, chipotle pepper sauce, with overtones of other peppers. Very addictive. Hot, and yet, not too hot. Yankees can stand it, natives can gulp it. Perfect balance and perfect blend, consistently excellent. That a tough market, too, in San Antonio,
